You are going to love❤️ this recipe. Quick meal and great for leftovers of making additional recipes. These shrimp have tons of flavor take minutes to cook and provide a healthy low carb option for the entire family

❤️ Use broth to sauté the veggies

❤️ Serve with chips and salsa (see my recipe)

❤️ If possible, organic, local or home grown veggies

❤️ Use this recipe to make many dishes,

❤️ Serve over cauliflower rice

❤️ Swap out Shrimp for Chicken, Pork or Steak

Ingredients

Coach❤️Theah Spicy Shrimp with Avocado & Salsa

  • 1 lb Shrimp

  • Broth for Sautéing or Avocado Oil (I used beef bone broth)

  • 2 green chiles (or can)

  • 1 jalapeno diced

  • 1/2 onion (optional)

  • Queso Fresco (or shredded Mexican cheese)

  • 1 clove garlic

  • 1 tsp cumin

  • 1 tsp cayenne pepper

  • 1 tsp onion powder

  • 1 tbsp lime juice

  • Salt & Pepper


❤️Directions for Sauté' Shrimp

  • Peel and clean your shrimp (if using shelled)

  • In a large bowl, add your shrimp with lime juice and then all your seasoning spices to coat your shrimp. toss in the bowl until completely covered

  • In a sauté pan, add peppers, onions, garlic with some broth (or cooking oil) and anything else you want to add to your shrimp

  • Sauté for about 5-8 minutes until the peppers are starting to cook then add your shrimp

  • As the shrimp cooks, you might need to add more broth or oil to the pan

  • Cook for about 3 minutes and then flip them over and cook until done (about another 3-5 minutes) . all the liquid in the pan should cook away, leaving you a nice shrimp with good coating

  • I love to just plate them and dip them in Salsa and guacamole

Other meals to make with your shrimp

❤️Lettuce Wrapped Shrimp Tacos

❤️Low Carb Tacos (I used Egglife Wraps below) but, any low carb or corn tortilla

❤️ Quesadilla (I used a low carb wrap) - baked in the oven just until browned, filled it and then folded it over. You can continue to toast in the oven at 425 for 5 minutes

❤️ Stuffed Peppers (I love poblano stuffed peppers)

❤️Served over Mexican cauliflower rice

❤️ Enchilada's Recipe below


❤️Shrimp Enchilada's - Assemble and bake the enchiladas

  • Pre-heat oven to 350.

  • Use a sheet pan or a 9X13 pan, covered with parchment paper

  • Optional (you can heat the egglife wraps in some oil on the stove top or in the oven)

  • Pour enchilada sauce in the pan, just enough to coat the bottom of the pan

  • Start assembling the enchiladas by dipping one side of your tortilla in the enchilada sauce, scoop shrimp into in the wrap add some cheese and chives in the tortillas and roll

  • Repeat until all your mix or wraps are done

  • Pour remaining enchilada sauce on top and top with remaining cheese.

  • Put in to preheated oven for 20 minutes. Just enough to warm all the way through and your cheese is melted

  • *Note.. don't over cook them or they will dry out
