Coach❤️Theah Mexican Cauliflower Rice


I'm not the biggest fan of cauliflower for many recipes, but, this Mexican cauliflower rice is perfect. You can use it to serve my chili recipe over, use it to stuff peppers or serve my Mexican spicy shrimp recipe over it for a complete meal. Great for leftovers or making additional recipes.

Coach❤️Theah Mexican Riced Cauliflower


Ingredients

Coach❤️Theah Spicy Shrimp with Avocado & Salsa

  • 4 Cups Riced Cauliflower (I prefer to used packaged but, you can use frozen or make your own)

  • Broth for Sautéing or Avocado Oil (I used beef bone broth)

  • 1 can diced green chilis (or fresh)

  • 1 can diced jalapenos (or fresh)

  • Any other fresh peppers (chopped and sauteed)

  • 1/4 cup Salsa (I used homemade)

  • 1/2 Small yellow onion

  • Queso Fresco (or shredded Mexican cheese)

  • 1 clove garlic

  • 1 tsp cumin

  • 1 tsp cayenne pepper

  • 1 tsp onion powder

  • 1 tbsp lime juice

  • Cilantro (chopped or dried)

  • Salt & Pepper


❤️Directions for baked Cauliflower Rice

  • Preheat the oven to 350

  • I prefer to bake the rice to reduce the water and makes it more like rice texture

  • Sautee any peppers, onions, garlic, tomatoes or other items in broth on the stove

  • In a large baking dish, add your cauliflower rice, lime juice and then all your seasoning spices to coat the rice. Add in your salsa, sauteed veggies or other items.

  • Spread the rice out evenly in the baking dish, bake for 15 minutes (until lightly browned), remove from the oven, stir and then spread it out again, place it back in the over for another 15 minutes or until it is to your desired tenderness. If you are using frozen rice, it might take a little longer.

  • Remove from the oven, sprinkle with Queso Fresco and Cilantro. Serve with your favorite Mexican dish or just toss with your favorite protein for a one meal skillet
