It is hot here in Florida and we have access to great seafood. Who likes sushi? How about making some Ahi Tuna Sushi bites or you can use Shrimp (if you don't like Sushi)...
These are quick and easy, light for lunch
Ahi Tuna / Shrimp Bites
Ingredients
Ahi Tuna or Shrimp (Grilled or blackened)
1 Cucumber
1 Avocado
1 Jalapeno (optional)
3 TBSP Tamari (gluten free soy sauce)
1 TSP Rice Vinegar (sugar free)
Pickled Ginger
Siracha
Liquid Stevia (optional)
Directions
Directions should always be short and to the point.
Thinly slice your Ahi Tuna, if substituting Shrimp, leave them whole
Slice your cucumber into bite size slices thick enough to hold the food, thinly slice or chop your jalapeno, Smash your avocado
Assemble your bites - Top the cucumber with avocado, then a slice of Jalapeno, add the Ahi or Shrimp, top with a piece of pickled ginger
Top with Siracha or your favorite hot sauce
To make the dipping sauce - 3 tbsp Tamari, 1 tsp rice vinegar, 1 tsp siracha or other hot sauce, couple drops of stevia to sweeten (optional)
