I used Artichoke Delight Packaged Artichokes for a quick mid week dinner option.

❤️ Ingredient List❤️

  • 4 Boneless Skinless Chicken Breast

  • Butter Chicken Broth (Kettle & Fire Soup)

  • 1 package Bacon (I used Applegate Sugar Free)

  • 4 tbsp cream cheese

  • Parmigiana cheese (Optional)

  • Diced Artichokes, Mushrooms or Tomato (Optional)

🌿Spices & Herbs 🌿

  • 1 garlic clove

  • 1 tbsp Italian seasoning

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1/2 tsp cayenne pepper

  • Salt & Pepper

*Note - you can use whatever your favorite veggies or spices or exclude it and keep it simple.



Directions

  1. Grab a skillet that is large enough for the 4 chicken breasts

  2. In the Skillet, fry up the bacon on media heat until it is done and crispy (not overdone and don't burn the bits)

  3. Remove the bacon and let cool (you will chop this and add at the end), keep 4 tbsp of bacon grease (you can drain this in a strainer to just use the bacon fat)

  4. Pat your chicken dry and season with spice blend - Salt & Pepper, Italian Seasoning, cayenne pepper, onion & garlic powder

  5. Cook the chicken in the skillet with reserved 4 TBSP of bacon grease on medium

  6. Flip the Chicken after 5-7 minutes & cook on the other side until done

  7. Remove the chicken from the skillet (check to ensure it is cooked through or feel free to cut into smaller pieces)

  8. Add Butter Chicken Broth to the Skillet, add any veggies, diced garlic, and cream cheese

  9. Once the broth starts to bubble, add the chicken and diced bacon back to the skillet

  10. Cook for about 5-7 minutes minutes

  11. Turn off the heat, top with grated Parmigiana Cheese

  12. Serve Cauliflower Mash, Mashed Potatoes or side salad
