Quick and Easy Tomato salad for summer





Coach Theah Tips

❤️Buffalo Mozzarella is my favorite but, mostly just find quality grass-fed dairy

❤️Organic tomato (tomato is on the dirty dozen list)

❤️ If possible find local farm and buy tomato, basil and cucumber locally

❤️ Use as many fresh herbs as you like

❤️ Use quality olive oil



These tomatoes, cucumber and basil came from my backyard




Coach❤️Theah Tomato, Mozzarella & Cucumber🥒 Salad 🥗

Ingredient List

  • Tomatoes (i used a combination of 2 medium and cup of small cherries because that is what I grew)

  • Cucumber (medium)

  • 2 tbsp Olive Oil (I used a garlic herb olive oil)

  • 1 tsp Vinegar

  • Basil (bunch)

  • Mozzarella

🌿Spices & Herbs 🌿

  • 1 garlic clove

  • 1 tsp oregano

  • 1 tsp parsley

  • onion & garlic chives

  • Salt & Pepper

Directions

  1. Chop the tomatoes, cucumber and basil (if using fresh) and place in a bowl

  2. Sprinkle with salt & pepper

  3. In a small bowl, add olive oil, diced garlic, herbs, and vinegar

  4. Combine all the ingredients in a bowl and let sit or refrigerate for 30 minutes prior to serving

  5. Pair with my crunchy bread (recipe to be posted soon)
