Slow cooker Italian meatballs, low carb, KETO, gluten free




Traditional meatballs use bread or breadcrumbs, this recipe includes a low carb pork rind breadcrumbs to make them KETO, low carb and gluten free.

Coach Theah Crockpot Italian Meatballs

Ingredient List

  • 1 lb ground pork

  • 1 lb ground beef (or you can use veal and/or bison)

  • 1 lb ground turkey (or chicken)

  • 1 medium yellow onion

  • 3 cloves garlic

  • 1 egg or 3 tbsp egg whites

  • 1/4 Cup Crushed Pork Rinds

  • 1/4 Cup Parmesan Cheese

  • 1 tbsp Oregano

  • 1 tbsp parsley

  • 1 tbsp Tomato Paste

  • 1 tbsp Crushed Red Pepper

  • 1 TSP Pepper

Directions

  1. Preheat oven to 400 degrees

  2. Sautee onions and garlic until tender

  3. In a large bowl, combine all the ingredients and mix

  4. bake in the oven at 400 degrees for 20-30 minutes, just until browned, they don't have be cooked through.

  5. Add the meatballs to your crockpot with homemade pasta sauce or jarred pasta sauce
