❤️ If possible find local farm fresh veggies

❤️ Use a blender or cup mixer

❤️ Double the recipe for the family or freeze them






I used home grown veggies... jalapeno, yellow bell, and a banana pepper in my mix







Coach❤️Theah Egg Bites

This recipe will make 6 egg bites


Ingredients


  • 3 eggs

  • 6 tbsp Egg Whites or use 6 whole eggs

  • 4 tbsp Ricotta Cheese (or Cottage Cheese)

  • Bacon, Sausage or Ham (I used Applegate turkey bacon)

  • 1 Jalapeno (optional)

  • Yellow pepper (Optional)

  • Salt & Pepper


Directions


  1. Preheat oven to 350 degrees F.

  2. Fill a baking dish (9x9) with water and place on the lower rack in the oven

  3. Spray muffin tin or silicone muffin cups with nonstick spray.

  4. In your blender or mixer, mix eggs, egg whites, ricotta cheese, salt, and pepper

  5. Mix on high until frothy

  6. Fill your muffin cups 3/4 full, add in the bacon or other ingredients

  7. Fill the muffin cups to the top and add some shredded cheese (optional)

  8. Bake egg bites for 30 minutes. They should start to puff up a bit and you can let them turn brown on top.

  9. Remove from the oven and let cool for 5 minutes before removing from the muffin cups
