About the Recipe

These are a great option for low carb dinners for the entire family

Ingredients

❤️2 Zucchini's

❤️1 clove garlic, crushed

❤️1 egg

❤️1 tsp. plant milk or Heavy Cream

❤️4 tbsp. pork rind crumbs (or GF breadcrumbs)

❤️2 tbsp Parmigan cheese (grated)

❤️1 tsp. dried oregano

❤️1 tsp. dried thyme

❤️3 tbsp. olive oil

Preparation

❤️Cut zucchini into fry-like pieces


Coach❤️Theah Tip: place them in a strainer and salt them, let them sit for an hour and then pat them dry, this takes some of the moisture out of them so they crisp up nicely.


❤️Preheat oven to 430°F (220°C) or your airfyer

❤️Crack the egg into a bowl and whisk with the cream or nut milk

❤️Season with salt, pepper, add the crushed garlic, oregano, and thyme. Mix well.

❤️On a separate plate, have your prok crumbs & Parm Cheese ready.

❤️Grease a large baking tray with 1 tbsp. of olive oil.

❤️Dip the zucchini in the egg, then roll in the breadcrumbs and place on the baking tray.

❤️Place the tray in the preheated oven and bake for 15 minutes (or use an airfyer)

❤️Turn the fries 2-3 times during this time, drizzling them with the remaining 2 tbsp. of olive oil.

❤️Season with salt and serve.
