White Chicken Chili Soup with bacon

About the Recipe

You are going to love this simple, tasty, quick and easy recipe. Toss all the ingredients in the crockpot and enjoy for lunch or dinner. This recipe is healthy and low carb for the entire family.


❤️3 Chicken Breasts

❤️3 slices bacon

❤️1 can green chiles

❤️1 Jalapeno diced (optional) or any other peppers

❤️1/2 small onion

❤️2 cups Chicken Bone Broth or Vegetable stock (I used Kettle & Fire)

❤️1/4 cup salsa (mild or hot)

❤️1/4 cup cream cheese (or kite hill if dairy free)

❤️2 tbsp Heavy Cream

❤️2 tbsp butter

❤️2 tsp cumin

❤️1 tsp cayenne pepper

❤️1 tsp onion powder

❤️1 tbsp garlic or 3 garlic cloves

❤️Salt & Pepper


❤️Directions: Cook the chicken mix in the crockpot

  • Put chicken in, add your chopped peppers, can of green chiles, salsa, spices and let cook on high for 3-4 hours.

Shredded chicken

Once the chicken is tender enough to shred it, shred it in the crockpot with 2 forks

❤️Add cream cheese, butter and heavy cream until well combined and a rich creamy texture

🤚🛑If you are making enchiladas, you would stop and proceed with making enchiladas (see below)

❤️For Soup, you would add the 2 cups bone broth or how much every you prefer to get the consistency you desire.

❤️Turn the crockpot to low and let it cook until you are ready to eat

❤️Pair it with a cheese crisp, low carb chips

❤️Top your chili with Shredded mexican cheese or queso fresco, guacamole, onions, diced jalapeños or chopped bacon.
