About the Recipe

This a great lunch salad or you can omit the protein and use as a side salad with dinner

Ingredients

For the salad

❤️4 handfuls of lettuce (use whatever you like) I used Arugula

❤️3.5 oz. smoked salmon, Grilled Salmon, Shrimp or chicken

❤️10 mini mozzarella balls, torn

❤️10 strawberries, halved

❤️handful basil leaves

 

For the dressing:

❤️1 tbsp. olive oil

❤️1 tbsp. lemon juice

❤️1 tsp. dijon mustard

❤️ 2-3 drops liquid stevia, or sugar free honey or syrup



Preparation

❤️Divide the lettuce leaves between two plates.

❤️Add the torn smoked salmon, Salmon, Shrimp or chicken (whatever protein you adding)

❤️Add mozzarella balls as well as the strawberries and basil leaves.

❤️Mix all the dressing ingredients and drizzle over the salads.

❤️Season with freshly ground black pepper and serve.


You can also exclude the protein and serve as a side salad to your dinner
