About the Recipe
Make ahead and have for lunch or serve on lettuce wraps as an appetizer
❤️4 bacon medallions
❤️4 hardboiled eggs, chopped
❤️1 large avocado, chopped
❤️2 tbsp. red onion, finely chopped
❤️2 tbsp. red bell pepper, finely chopped
❤️sea salt & ground pepper, to taste
Fry the bacon until crisp on a non-stick pan. Let it cool slightly and chop.
Combine the bacon, eggs, avocado, onion and bell pepper in a bowl.
Season with salt and pepper to serve
