About the Recipe
who doesn't love Caprese salad... enjoy this over greens or as a meal with marinara sauce
❤️2 boneless skinnless chicken breasts
❤️ fresh mozzarella cheese, 2-4 slices
❤️2 Roma tomatoes, sliced
❤️¼ cup fresh basil, cut into long, thin strips
❤️ Red onion slices (optional)
Mix all of this in a dish
❤️1 tbsp olive oil
❤️1 Tbsp vinegar
❤️1 tsp sea salt
❤️1 tsp italian seasoning
❤️1 tsp rosemary
❤️½ tsp garlic powder (or fresh garlic)
❤️½ tsp ground black pepper
❤️cayanne pepper (optional) I just sprinkle a little
❤️ Season the chicken with salt & pepper, cook in the airfryer, on the grill or in the oven or in a skillet until brown on both sides
❤️ Preheat the oven to 375°F (190°C).
❤️ Transfer the chicken to the oven and bake for 20 minutes.
❤️Remove from the oven and top each chicken breast with fresh mozzarella and tomatoes.
❤️Return to the oven for 3 minutes.
❤️Top each chicken breast with fresh basil and drizzle with vinegar (optional) before serving
❤️ Serve over a bed of lettuce or arugula....
Or Enjoy as a meal with extra marinara
❤️(Optional) I enjoy mine over a little more tomato puree or marinara sauce
❤️You could serve it with a side of sauteed zuchini or summer squash
